Normally produced with olives mainly of the Correggiolo variety from the mid-October harvests. The climatic characteristics and the incomplete state of maturation during the harvest period give this oil aromatic notes that are highly appreciated by all lovers of strong flavours.
This oil is best paired with dishes with a complex and elaborate taste-olfactory structure such as legume soups, vegetable soups, red meats, roasts, bruschetta, mature cheeses, salads and wild vegetables.
